Chicken tacos with guacamole, mango salsa and red cabbage


Hello everyone! I hope you are fine and ready for a new recipe 🙂 Today I have got for you something from Mexican cuisine. So all taco lovers, prepare yourselves!

Few days ago I was invited for a dinner with few friends of mine and one of them prepared amazing tacos. As I do not eat that often Mexican food I had never prepared tacos before. But from that dinner I think I am a new member of tacos club 😀 That food is incredibly variable! You can literally stuff tacos with whatever you want and as I really like fresh and healthy food I went for lots of  vegetable in a combination of a bit spicy grilled chicken. I learned that lime juice and coriander are pretty popular in Mexican dishes and they tastes amazing. For salsa I decided to use mango as I personally love the sweet combination of fruits with meat and veggies. My very favourite one pick is guacamole and thats why I use it in this recipe. The red cabbage slaw adds to the dish even more freshness and makes it crunchy 🙂 So I hope you really like my version of tacos, but remember, in a cooking there are no rules so feel free to add whatever you want and like.






Marinated grilled chicken breasts

  • 2 chicken breasts
  • Juice of 1 lemon or lime
  • Salt & pepper
  • A handful of chopped coriander
  • 2Tsp of lemon zest
  • 1 chilli pepper (or any hot pepper), chopped & seedless
  • 2 cloves of garlic, chopped
  • 1/2 cup of olive oil

Red Cabbage Slaw

  • 1/3 of a cabbage,  thinly sliced
  • 1/2 of red onion,  thinly sliced
  • Juice of 1 lime
  • Splash of olive oil
  • Salt & Pepper
  • A handful of chopped basil
  • 1Tsp of brown sugar

Mango salsa

  • 1 ripe mango, peeled and diced into cubes
  • 7 cherry kumato tomatoes, cut in quarters
  • A handful of coriander, chopped
  • 1/2 red onion, chopped finely
  • Juice of 1 lime
  • Salt & pepper


  • 1 ripe guacamole, chopped
  • Juice of 1/2 lemon
  • Salt and pepper
  • 3Tbs of olive oil
  • 1 clove of garlic, minced


  • Mexican tortillas


Marinated grilled chicken breasts

  • Wash the chicken breasts, cut off the fat parts, and put them to the bowl. Add the rest of the ingredients and let them marinate at least for 2 hours, but preferable a day before. Heat the pan and grilled them from both sides. Do not pierce the meat otherwise it will lose a juice.

Red Cabbage Slaw

  • To make cabbage slaw, combine all the ingredients in a medium bowl. Let it rest for half an hour.

Mango salsa

  • To make mango salsa, combine all the ingredients in a medium bowl.


  • To make guacamole blend all the ingredients together. If you don’t have a blender, mash the avocado with a fork and mix it well with the other ingredients.


  • To serve tacos, warm up the tortillas in a larger pan.
  • Shred the chicken breast and place it on tortilla. Add cabbage cole slaw and mango salsa according to your taste. Top with the salsa.
