Here comes one of my favourite salads 🙂 I love avocado no matter what kind of recipe it is but in a combination with tomatoes, olive oil and lime juice it’s amazing and so fresh. To be honest I am probably an avocado & tomato fanatic and I can eat these fruits even every day. Did I say fruits?
And yes, I did! It may be hard to believe, but these tasty healthy things are not a vegetable, but fruits. And not just some kinds of ordinary fruits but super healthy ones 😛 Tomatoes are packed with vitamins A and C, calcium, potassium, and lycopene. And what about avocado? It helps reduce bad cholesterol levels in your blood and lower your risk of heart disease and stroke plus it is full of magnesium and potassium, two nutrients known to help reduce blood pressure. People usually connect this fruit with a guacamole, but there are many other ways how to serve avocado. I hope you like this idea because it is definitely worth trying it 🙂 If you prepare enough of it, you can even serve it as a main meal with fresh baked bread. I absolutely love the combination of avocado, small juicy cherry tomatoes, lime juice and olive oil. It is so amazing and mouthwatering . To improve this recipe and get it to a different level I mixed it with slices of red radish and red onion. “The icing on the cake” are definitely sprinkled hemp seeds which are my personal health boost of many dishes.
- 12 cherry tomatoes, cut in half
- 1 avocado, cut into small cubes
- 5 small radishes, sliced thinly
- half red onion, sliced thinly
- olive oil
- freshly ground himalayan salt
- freshly ground black pepper
- juice from 1 lime
- 1-2 Tbsp. hemp seeds
- combine veggies, olive oil and lime juice in a medium size bowl. Season with salt and pepper and sprinkle the salad with hemp seeds.
